Spotlight on Chili

Just ate some leftovers from my second Meatless Monday! I made an awesome vegan chili, which we served with brown rice and some corn bread.


Doesn’t that look delicious? It was very thick and hearty–I don’t think anyone would miss the meat. Bulgur was the key ingredient; it gives it that kind of grainy texture you get with ground beef or ground turkey. And the dish is super-healthy of course.

My mom still guided me and lended an extra pair of hands, but I really did most of it myself and I’m proud. I know how to make chili now! That will be incredibly useful for the rest of my life.

Chili is a fantastic one pot meal; it is so nutritious, balanced, and filling, and I think it’s one vegan dish that everyone can get on board with right away. Sometimes people think a vegan diet is all raw veggies, but that’s so not true. Look how satisfying a meal you can make from grains, veggies, and legumes.

Please consider trying a Meatless Monday! Ease yourself in with a hearty chili =). Now, for all you vegetarians, what should I make next?
